Crawfish are captured by means of pots and traps and transported alive to the transformation installation. There, they are classified by size, quality and day of capture. The pieces, which are not convenient because of quality requirements are eliminated (size, broken pieces, freshness). Before the cooking, crawfish are washed during approximately an hour in potable water, then they are rinsed and cooked and then refreshed in water. Cooked crawfish are packed in a tray at 1 kg and in cardboard box at 8x1 kg net weight. In this way, the final product arrives at our facilities where it is placed in a cold store until its distribution.
